Roasted Sweet Potatoes A Holiday Recipe From Chef Mario

Ah, the sweet potato.

The classic side dish is a colorful, flavorful addition to your holiday menu. When you’re looking for a surefire way to wow your family and friends this Thanksgiving, skip the marshmallow topping and opt for a simple roasted sweet potato recipe.

AKB Austin’s chef de cuisine Mario Medina’s Thanksgiving menu always includes sweet potatoes — at both AKB and home. Since chef Mario typically spends the day preparing the feast for guests, he usually enjoys his Thanksgiving meal with family or friends the day before or after the holiday.

“I look forward to preparing the AKB Thanksgiving meal as much as I do cooking for my family,” said chef Mario. “I like this recipe because it’s simple and delicious — and I love sweet potatoes any time of year.”

Roasted Sweet Potatoes Recipe courtesy of chef Mario

4 cups sweet potatoes, peeled and medium-diced
½ cup sweet onion, small-diced
1 garlic clove, minced
3 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 pinch salt and pepper
1 tablespoon parsley, chopped

  1.  Heat the oven to 425˚.
  2. To a bowl, add sweet potato, onions, garlic and olive oil; toss to coat.
  3. Transfer mixture to a roasting pan and place in the oven; stir frequently until vegetables are soft and golden brown, about 30 minutes.
  4. Drizzle with balsamic vinegar.
  5. Season with salt and pepper.
  6. Garnish with parsley.
